Arriving at Villa Schiatti, you will be welcomed by the villa’s owners Angelo and Julia and will enjoy a delicious Tuscan-style meal, accompanied by fine local wine, all courtesy of the villa’s in-house chef.


Day in Montepulciano & Siena | The Secrets of Italian Cuisine Cooking Class

Following breakfast, you will set out on a full day adventure into the heart of Tuscany. The driver will take you and you are on your own to discover Montepulciano, a historic medieval town atop a hill, renowned for its elegant Renaissance palaces, ancient churches, charming squares, and vast panoramic views of Val d’Orcia and Val di Chiana. Since automobiles are not allowed in the center of Montepulciano, walking provides the best view of the picturesque town and its beautiful landmarks. The surrounding area, known since the 8th century for its superior wine, produces Vino Nobile which has been described as “the king of all wines.” Moving on, you travel to the charming hill town of Siena which will transport you back to the Middle Ages. It is likely Italy’s loveliest medieval city. You will be free to explore Siena’s grand cathedral, built in the 1200’s, home to treasured art works and marvelous marble floors. The Piazza dei Campo, the main town square, is a UNESCSO World Heritage Site. You will be provided with two walking maps to choose from or simple enjoy the town and lunch on your own. Returning to the villa, you will participate in the Secrets of Italian Cuisine cooking class, creating your four-course meal from varied Italian regions accompanied by local wines.


Truffle Hunt and All Things Truffles Cooking Class

Go right to the source of some of the finest Truffles in the world. Award-winning Boscovivo has been collecting and producing the highest quality products from Truffles of 100% Italian origin. Family owner Silvia Landucci, export manager and member of the Arezzo Chef Association, will lead your exploration into this fascinating gastronomic pleasure. You will go along with Silvia and the authentic Truffle Hunter and his dogs to see how truffles are harvested and learn the traditions surrounding this earthy jewel. A visit to the Boscovivo factory will explain the process of preparing for shipping to restaurants and shops. The cooking class will feature a starter of Tuscan Salami with black truffles, White truffle cheese, aged pecorino with acacia honey and white truffles, and various canapes with truffles. The following courses feature Tagliolini with white truffle sauce and pappardelle with salmon and black truffles, Arista al latte, a pork with cream sauce, cannellini beans and truffles, topped by a seasonal dessert. Today you will create your own personalized Tuscan retreat. You may choose to stay in and relax by the pool with a drink and some music, dine at the Villa Schiatti restaurant, or walk around the majestic gardens. Travel southwest to Assisi, an inspiring medieval city built on a hill and the birthplace of Saint Francis of Assisi. To visit Assisi today is to see it almost as Francis himself saw it, and the solitude and tranquility can be quite appealing. Strolling along cobblestone streets and alleys, your wanderings will most often take you back to the Basilica of St. Francis and the site of the Tomb of Saint Francis. On the Piazza San Francesco, you will find a variety of restaurants and shops filled with local arts and crafts and wine. Travelling on through Umbria, you will find the picturesque hilltop city of Perugia, an endlessly fascinating city of towers and churches, ancient gates and arches, sunny squares and cool narrow passageways, panoramic views and Raphael frescos. Today your ventures will center on the medieval town of Castiglion Fiorentino, which is located at the center of a triangle formed by the cities of Florence, Siena and Perugia. Situated on a hilltop, Castiglion Fiorentino offers magnificent medieval walls, beautiful churches, exquisite art treasures, and fascinating Renaissance structures. You will embark on a walking tour of this enchanting town, learning about its rich history, while enjoying some succulent local specialties and wines along the way! Tonight’s cooking class will focus on preparing seafood and fish with instruction in the simple, yet special way to prepare these delicate and delicious dishes.
